Formula for grams to cups

Cups = grams ÷ grams per cup

Example: 100 grams of all-purpose flour divided by 120 grams per cup equals 0.83 cups.

Formula for cups to grams

Grams = cups × grams per cup

Example: 2 cups of granulated sugar multiplied by 198 grams per cup equals 396 grams.

Methodology and limitations

King Arthur Baking is the primary source for baking ingredient weights. NIST is used for the US customary cup volume. USDA FoodData Central is used where an ingredient is outside the main baking chart. These references are documented in the downloadable Sources PDF.

We select one documented working standard per ingredient and do not silently mix standards between pages or tools. Where a value naturally varies, the ingredient state and note explain the limitation.

If a recipe publisher supplies its own weight for one cup, follow that recipe-specific value because it reflects the way the recipe was tested.

Ingredient Density Data FAQ

What does grams per cup mean?
It is the reference weight of one US cup for a clearly named ingredient state. The value is used in the formulas grams divided by grams per cup and cups multiplied by grams per cup.
Can I download the data?
Yes. The current dataset is available as JSON and CSV from the download buttons on this page.
Why do ingredient values vary between publishers?
Brands, ingredient forms, packing methods, cup standards and recipe-house conventions can differ. This dataset documents the state and source used for each value.
How often is the data reviewed?
The page shows its latest review date. Values are updated when a source changes or a documented correction is required.
